Ingredients (2 Servings):
1 ripe avocado, sliced into 1 inch cubes
1 Tbsp. Peri-onnaise
1 Tbsp. lemon juice
1 tsp. chopped red onion + garnish
1 tsp. diced tomatoes + garnish
sea salt & pepper to taste
1. Combine all ingredients in large bowl (except for a tiny bit of tomatoes and onion for garnish)
2. Using the back of a fork, "mash" the avocado cubes into pulp while mixing the other ingredients into the avocados. You want to make sure you use a large enough bowl that you can really work the avocados, onions and tomatoes easily.
3. Stir, place in smaller bowl and top with tomatoes and onions.
4. Serve with Blue Corn Chips
